Why use #FoodGradeLime for nixtamalization?

CAL PARA NIXTAMAL

Nixtamalization is a traditional process of cooking corn with food-grade lime and water to enhance its nutritional properties and retard decomposition.

A factor that every miller or industrial producer must consider is the purity of the lime or the available calcium hydroxide content used in the nixtamalization process.

Today, many people still nixtamalize with construction-grade lime. This product has a lower concentration of calcium hydroxide and may also contain heavy metals and other toxins that can affect consumer health.

That is why, at Grupo Calidra we have developed Nixtacal and Nixtacal Plus, which are food grade limes; both are limes to make tortillas, designed especially to satisfy the needs of dough and tortilla millers and industrialists, which comply with the specifications of the Codex Químico Alimentario, and the Kosher Pareve Certification.

LIME IN THE SUGAR CANE INDUSTRY

The use of calcium oxide Oxid pulverizado in sugar production allows for the precipitation and separation of a large portion of the juice's impurities, in addition to neutralizing its natural acidity by forming insoluble calcium salts.
· Improves filtration and the elimination of small particles and fibers.
· Sterilizes the juice, sanitizing it by removing bacteria and ferments.

LIME IN FOOD CONSERVATION AND PRODUCTION

Our Quimex products play a crucial role in food production and conservation. They are utilized in the production of calcium phosphates for the manufacturing of infant foods and reconstituted beverages.
